Chile con Carne


Chili con Carne 2022

  • 2 lb ground beef
  • 1 onion chopped
  • 2 or 3 cloves of garlic, smashed, diced
  • 2 15-ounce cans fire roasted diced————- or see next line.
  • 1 4-ounce can hot green chiles chopped —or get tomatoes with chili peppers
  • 2 Tablespoons cumin
  • 2 Tablespoons Oregano
  • 1 1/2 teaspoons salt
  • 1 Tablespoon chili powder mix (1 tsp. Ancho; 1 tsp. Chipotle; 1 tsp. Cumin)
  • 1 can tomato paste

Cook onions until translucent, add garlic, add ground beef, cook until all pink is gone, chopping for bite size.

Add all the tomato, chili peppers, and spices, herbs, seasonings, stir well.

Cook on low to medium heat, bring to a simmer, put on the lid, and simmer for about an hour, or two. Until it’s hot and yummy smelling wonderful and ready to eat. Stir occasionally.



Serving

Serve with grated cheddar and sour cream, and whatever else you like.

Leftovers

Save leftovers. Reheat single servings in the microwave.


Crock Pot

In a crock pot, you would put all of that into the crock after the cooking of onion and garlic and meat, and let it cook on low all day, 4-6 hours is fine.
